I've visited here afternoon and many shops selling interesting food everywhere. I've seen lots of Matsutake mushrooms made in China and Canada. And not many shops open in the morning just in case.

Great local market with affordable breakfast and lunch options. Ate at a tuna restaurant and the chicken katsudon place. Also had a coffee at Benny's. Wanted to try the oden but long lines for it.
If you're a tourist, some vendors don't like you taking pictures. The one who yelled at me was an older fruit vendor. So, be aware that photography may not always be welcome.

Part of the market was being renovated when we visited, so there wasn't much to see. Locals still visited for their daily shopping, sea food and local specialities are there. Pleasant visit, but did not have time to spend browsing. Worth a visit if you are in Kokura.
